Gary Labs Inaugural Letter from the Editor 12/16/2021
Dear Reader,
Before you ask, "What is GaryLabs?" let me stop you right there and say I don't know. I don't know what GaryLabs is. But I can tell you what it's been.
GaryLabs has been disinfectant in a pandemic.
GaryLabs has been fuel for margarita night, and again disinfectant when a fight broke out at margarita night.
GaryLabs was a processor for local residential gardeners when harvest came and too much stuff grew.
A test kitchen for cutting-edge fermented culinary products.
A bakery.
A kombucha brewery.
A two-stroke motorsports team.
A sponsor for the Midwest's most hated rugby team.
GaryLabs can be whatever it's community needs it to be.
If you're wondering why we bother, it's because we want to share what we've learned and we'd like to find new oppurtunities to serve and improve our community.

Those inspiring words also encapsulate why we bother. We believe that if you have the guts to try, there's an honest living to be made solving problems for people in your community with unique problems.
So Reader, if you're still wondering what "GaryLabs" is, stop by the lab [edit: the OG lab is no longer in service. but welcome to the new virtual lab! ]. Have a drink, check some stuff out.
